    Red yeast rice powder is made by culturing rice with various strains of the yeast Monascus purpureus.

    Chinese food products, such as Peking duck, contain some red yeast rice preparations. Others have been marketed as dietary supplements to lower lipid and associated lipid levels in the blood.

    Monacolins, which the yeast produces, are present in some red yeast rice products. Monacolin K is a medicine that belongs to the class of medications known as statins and shares a molecular similarity with the substance that lowers cholesterol, lovastatin. By decreasing the liver's ability to produce cholesterol, these medications lower blood cholesterol levels.

    Depending on the yeast strains and culture conditions employed during production, different red yeast rice products have different compositions. When making red yeast rice for cooking, different strains and environmental factors are used from when making cholesterol-lowering goods. According to FDA tests, the red yeast rice marketed as a food product either doesn't contain any monacolin K at all or barely contains traces of it.
